5 Healthy & Easy Breakfast Ideas

Breakfast is without a doubt, my favorite meal of the day. It is so comforting to me to have a slow morning with a cup of coffee and a yummy breakfast.

Sometimes, I do enjoy a fancy spread with biscuits, sausage, pancakes, the whole nine yards. But on a day to day basis, I like things that are easy to make with just a few ingredients.

These are a few simple recipes that I enjoy and rotate through during a normal week.

1. Overnight Oats With Berries

What you need:
  • 1/2 cup oats
  • 1/2 cup milk (I use almond milk)
  • 1/2 tsp honey or maple syrup
  • 1/4 tsp vanilla extract
  • top with whatever type of berries you like!
How to prepare:
  • Place all of the ingredients into a sealed container (mason jar, Tupperware, etc.) and shake until combined
  • Place in the refrigerator overnight and enjoy the next morning!

2. Almond Butter Toast with Strawberries

What you need:
  • Bread (I love Dave’s Killer Bread)
  • Almond Butter (I use Justin’s Classic Almond Butter)
  • Strawberries
How to prepare:
  • Toast your bread
  • Smother it in almond butter
  • Slice strawberries and place them on top
  • To spice it up, it is also delicious with a drizzle of honey on top!

3. Berry Smoothie

What you need:
  • 1/2 cup frozen berries (frozen is KEY! I use assorted berries)
  • 1/4 cup yogurt (any kind works)
  • 1/2 cup of milk (I use almond)
  • 1 tbsp of almond butter
How to prepare:
  • Place ingredients in the blender in this order: milk, yogurt, berries, almond butter (trust me, this will make it blend better)
  • Pour into a glass and enjoy! (I sometimes top mine with granola if we have any!)

4. Cheese on Toast With Egg on Top

What you need:
  • 1 Slice of bread
  • About 1/4 cup of your favorite cheese (shredded or slices both work)
  • 1 egg
How to prepare:
  • Turn on the oven to broil
  • Put the cheese on the toast and pop it in the oven (keep a close eye on it so it doesn’t burn)
  • Meanwhile, crack the egg in a pan on medium heat with a little oil or butter. Put a lid on and leave it for about 3 mins, or until the egg is at a temperature you like.
  • Take out the toast and put the egg on top. I like to add a little bagel seasoning on top, but a little salt and pepper works great as well!

5. Everything Bagel Seasoning Eggs and Bacon

What you need:
  • 2 eggs
  • 2 pieces of bacon
  • Everything But The Bagel Seasoning
How to prepare:
  • This one is pretty flexible. I simply fry the bacon in a pan and prepare my eggs how I like them (usually scrambled) and then sprinkle the seasoning on top. If you have not tried Everything But The Bagel Seasoning from Trader Joes before, you are missing out! Since we do not have a Trader Joes near me, I use the 365 Everything Bagel Seasoning from Whole Foods.

I am by no means a nutrition expert, but these breakfasts are very satisfying and keep me full until lunch and I think that counts for something!
