Today I am reaching into the archives of SweetPotatoPi (my high school blog) and re-sharing one of my family’s all-time favorite recipes.
This recipe is easy, delicious, and great for 2 people or 20 people. It’s a very flexible recipe and works well for storing in the freezer and pulling them out to make whenever you need!
Ingredients:
- 1 1/2 lbs lean boneless pork loin
- 1 (12 oz) package 50% less fat ground pork sausage
- 1 1/2 teaspoons salt
- 15 water chestnuts finely chopped
- 1 to 2 tablespoons minced fresh ginger
- 1/2 cup cornstarch
- 2 teaspoons soy sauce
- 1/2 cup fat-free, reduced sodium chicken broth
- 4 tablespoons sugar
- 1 teaspoon teriyaki sauce
- 1 teaspoon sesame oil
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 4 green onions, chopped
- 2 (16 oz) wonton wrappers (in my grocery store, they are found near the garlic and fresh ginger)
What to do :
Process pork loin in food processor until finely chopped. Then combine pork loin, pork sausage, and the next 12 ingredients.
Drop ~about~ 1 teaspoon of the mixture into the middle of a wonton skin. Gather up the sides and pinch together to secure the closure. Can be a really fun activity to do with friends — or siblings, like us, slaving away making dumplings ;). Pan fry for 20-25 minutes or steam until the wonton is translucent.
We typically double the recipe and store half of it in the freezer.
Dipping Sauce:
- A little bit of garlic, chopped green onion, add to some soy sauce — voila!
